Happy Sunday and welcome to my new series of food prep Sunday.
Each Sunday I will aim to write a post on my food shop and what meals i have prepared for the week ahead. (look to be honest it might be late sometimes) I’m trying something new and completely different. I now go food shopping on Sunday morning to make sure I have everything I want to cook with to make yummy goodies for the twins and I to eat. Mainly snacks and lunch.
This food shop was a big one for me tho. Normal dog and cat food is a once a month thing to buy an edit just so happened that today was the day we needed it.
While this may not look like much to people, we actually buy our meat from the butch and that is not included in this and ether are vegetables as I had already gotten them from the farmers market earlier in the day.
We go through milk like there is no tomorrow in this house as the cat also drinks it as well. Weird I know. I brought lots go yummy fruit and salad stuff. Snacks for kinder and day care for the twins. Yogurt for me, James was told he couldn’t have any after he used all the jam with his yogurt last time. And a few other bit and pieces.
Next was sorting it all out to work out what I was cooking with today and what needed to go away.
I started off by making my salad for my lunch for the week.
I used baby because lettuce, mixed green salad, avocado, fetta cheese (organic) baby cucumber and tomatoes. Plus I cooked up some chicken and added it later on.
Next up was the twins lunch and snack, ham and cheese pasties. I made huge amount of them. Possible a bit too much.
They love them tho and I’m super happy with how they turned out.
Next up was Bliss ball by the wonderful Gratitude project.
Yes they have no coconut on the outside but I forgot to buy it!!. they are so amazing tho and much better for me to eat then a hole block of chocolate!. Im super happy by them.
The recipe is as followed-
2 cups almond meal 1/2 cup shredded coconut 1/2 cup raw cacao powder 10 medjool dates - pitted 1/2 cup coconut oil 1/3 cup honey or rice malt syrup
1/3 cup chia seeds 1/3 cup goji berries 1/3 cup cranberries
You could also roll these in desiccated coconut or chia seeds.
These are a good go to chocolate treat. Using almond meal makes them moist and a little less textural, which I like. I make a double batch of these and keep a whole lot in the freezer.
1. Place the almond meal, shredded coconut and raw cacao powder in a food processor with the pitted medjool dates. 2. Process until completely combined. Transfer to a large bowl and stir in coconut oil, honey and any extras. 3. Roll tablespoon sized balls and set in the fridge overnight or freezer for 1 hour.
